In Germany you will find two very different styles of potato salad. In Northern Germany potato salad is generally made with mayonnaise and is quite similar to its U.S. counterpart, whereas the Bavarian Style Potato Salad found in Southern Germany is prepared with vinegar.

Ingredients

1 Lb. small white potatoes Yukon Gold would be best
1/3 cup red onion, finely chopped
2 Tablespoons parsley, finely chopped
1/2 teaspoon dried dill
1/2 cup red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons vegetable broth
1/2 teaspoon sugar
1 Tablespoon vegetable oil I use sunflower oil

Bavarian Style Potato Salad

This Bavarian Style Potato Salad comes to us from Southern Germany is prepared with vinegar. An authentic Bavarian Kartoffel Salat, excellent served as a side with the Italian Picnic Hero Sandwich.

Preparation

  1. Boil the potatoes, skin on, until fork tender (20-30 minutes). Drain and allow to cool just enough to be able to handle.
  2. Peel the potatoes, cut each one in half, then into thin 1/4 inch slices and place into a large mixing bowl.
  3. Add the vinegar to the warm potatoes and gently stir with a large spatula.
  4. Mix in the oil and then the sugar.
  5. Taste the salad and add more salt if necessary.
