Italian Picnic Hero Sandwich

Green Beans, Basil, Hard-Boiled Egg, and a Tomato-Onion Vinaigrette. This is a vegetarian version of the classic Italian Tuna Hero that I used to enjoy so much. Made with exactly the same ingredients except tuna. Perfect to take on a short hike or outing and serve as a picnic lunch.

Ingredients

6” section Italian or French breadA Mexican bolillo also works well
1 teaspoon red wine vinegar
3 teaspoon olive oil
1 clovegarlic, minced
6-7fresh basil leaves, chopped
2 slicestomato, diced
1 slicered onion diced
to taste salt and fresh ground pepper
6-7fresh green beans, cooked Cook and chill in the fridge a day or two before

   Italian Picnic Hero Sandwich,

Preparation

  1. In a small bowl combine vinegar, oil, garlic, salt and pepper, basil, tomatoes, and onion. Toss with a spoon to blend.
  2. Cut bread in half lengthwise, and open on your cutting board
  3. On the bottom half first place the green beans then top with the tomato-onion mixture, saving as much of the oil and vinegar as you can in the bowl.
  4. Spread the remaining oil and vinegar evenly on the top half of the bread.
  5. Place the egg slices on top of the tomato-onion mix, and fold the top half down to close.

Serving Suggestions

If you are planning a picnic, wrap the sandwich in plastic wrap, and serve within 1 or 2 hours. The sandwich does taste better after the flavors have had a chance to mingle for an hour. The sandwich will also taste better after an hour of anticipation. This Hero can also be made on a large 1 lb. loaf of bread, and cut and divided between 2-3 people, just double or triple the ingredients.
