Ingredients

1 or 2 handfuls tortilla chips
1/2 cup pinto beans drained
1/2 cupcheddar or mozzarella grated
1/2 avocado cubed
pickled jalapenos slices
red onions diced
cilantro roughly chopped
sour cream
salsa

   Perfect Microwave Nachos

Preparation

  1. In the microwave, preheat the beans in a cup or bowl.
  2. Arrange the desired amount of tortilla chips on a large dinner plate.
  3. With your hand sprinkle the cheese evenly over the chips, then with a spoon spread the beans out evenly.
  4. Microwave for 30 seconds to 1 minute or until you can see the cheese begin to melt.
  5. Add the following ingredients evenly over the top, avocado, jalapenos, onions, and cilantro.
  6. Top with sour cream and the salsa of your choice.

   Serving Suggestions

No cheese and no sour cream = Vegan Nachos

You can easily add or omit ingredients as you like, or depending whats in your refrigerator.
