This is the ¨classic” oven roasted potato recipe found in kitchens throughout the world. This recipe has been in my family since the 1970’s, when my father was working on a navy boat. He came home one day and described to my mom how the cook was preparing the potatoes, it was an instant family hit. Enjoy.............

Ingredients

2 poundssmall red or white potatoescut in halves or quartes
1/4 cup olive oil
1-1/2 teaspoonkosher salt
1 teaspoonfreshly ground black pepper
2 Tablespoons minced fresh parsley

Here is the classic Garlic Roasted Potatoes recipe…serve as a side dish or as the ¨meat¨along with soup, salad, and vegetables.

Preparation

  1. Preheat the oven to 400 degrees F.
  2. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated.
  3. Transfer the potatoes to a rectangular Pyrex baking dish and spread out into an even layer.
  4. Roast in the oven for 45 minutes to 1 hour or until browned and crisp.
  5. Flip once or twice with a spatula during cooking in order to ensure even browning.
  6. Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Serving Suggestions

Large potatoes can be used as well, although they cook slower than the small ones and usually require the full hour. Cut each potato in half length wise, then cut each half into 4 wedges.                     Serve these as a side dish with dinner or re-heat as breakfast potatoes.
